And you can.  The point is that it already exists.  Field at his best may
not match Mozart or Chopin at their best, but if you want to hear some
well-written music half-way between Mozart and Chopin, try Field.

Clara Schumann's music might be worth investigating, too - IMO it sounds
rather more like Chopin than like Robert Schumann.
