Grey poupon style or whole grains do work better because the emulsifier comes from the mustard seed - less of that and more additives in that bright yellow stuff people call mustard. It's fitting for hot dogs but not real cooking :-) You can also use ground mustard (in the spice section). They had a great balsamic and orange juice recipe that used the fat in butter as an emulsifier - interesting because it worked based on temperature. Just a note: Avoid fresh garlic if you are combining it with olive oil and storing it for any length of time - if it hasn't been stored properly, you can get sick.
