Sci-Port Discovery Center has a fully outfitted shop + an electronics
shop in a side office.  The shop also has an office where exhibit
documentation, laminate samples, small exhibit extras, and the Exhibits
Manager's office are kept. During the space center expansion, we also
had a satellite shop in the offices of the decrepit old city
planetarium.  Finished exhibits were stored under the old planetarium
dome until the expansion was ready to be filled. 

I have a related question:  Has anyone ever used their shop for
programming?  I am thinking of an afterschool program or camp called
"GirlsShop" or "BoysShop" where kids could actually use the tools (under
hypervigilant supervision of course).  I wonder if any of you have
delved into a project like that?

Pittsburgh's original Buhl Planetarium and Institute
of Popular Science, used as Pittsburgh's primary
science and technology museum from 1939 to 1991, did
have a Workshop on the Lower Level, off of the
Mezzanine, where exhibit components were repaired,
maintained, and sometimes constructed.
