I've done a fair amount of work with these kinds of interactives.  Its hard to answer your questions generically.  Some of the exhibits we have done with gesture based systems have been very popular and kept people's interest, some have been more difficult for visitors.  Generally, I think the systems have a lot of potential, but it takes a very creative designer to develop programs that work in that context.  Working with Scott Snibbe is a very different experience than working with Playmotion, they have different approaches and different markets.  There are two other designers who are very creative and have developed some of the classic gesture-based apps, Zak Simpson and Camille Utterback. 

There are also a lot of students in the various IT/Design/Media programs out there who are developing these kinds of apps, and we have had a lot of fun working with some of them, and gotten some beautiful work.  Because there are more or less packaged software products that allow people to create these apps (processor and jitter are the two that I have seen being used most often), more people are experimenting with gesture based interactivity.

If you are planning to buy a pre-existing application, rather than developing a custom one, I would user test it.  Watching people use a gesture-based interactive is very different from actually using one.
