I have always been fond of environmental "stuff".  For example, at the Indianapolis Children's Museum many years ago, they had a pond/stream arrangement with wildlife.  Kids would watch the fish and turtles, and follow them all over the place.  They really stuck with it for extended periods of time.  

Many of the physics exhibits we usually see are not explored as fully as we would like to think they are, pan pipes get banged a few times (maybe a budding musician does Mary Had a Little Lamb), and kids tend to run wild in mazes.  Whisper dishes usually end up with kids yelling into them.
