You might try a literature search.

try Science Education or the Journal of Research in Science Teaching  
for starters, there have been a number of papers written on student  
learning, field trips, etc. by Gilbert, Priest, Griffin, Symington,  
Jarvis, Pell, Cox-Petersen, Kisiel, and others.

you may be surprised, or shocked, depending on your expectations.
