When we've done it, we put liquid N2 into a plastic nalgene bottle.  We
then screw on the lid tightly, throw the nalgene bottle into a large
plastic garbage can (with vent holes drilled into it & a bucket of water
in the bottom of the garbage can), and slam on the garbage can lid
quickly.  It still makes for a nice kaboom but nothing spatters onto the
audience.
