I think the idea in the tradition is that sweet+suckiing=comfort -- not so different from that glucose-by-syringe -- and the tradition's two ideas of sweet are wine and honey. The reason they get wine and not honey is that the person holding them at this point in the ceremony is also holding a cup of wine, so it's handy. But the baby still only gets a dip-and-taste. But the quantity making it down those little gullets is much less than you would use a feeding bottle for, thank god.
