Sounds like foremilk/hindmilk imbalance to me, with a little subtle
OAMER/oversupply thrown in for good measure.  We were all "seeing" f/h
imbalance a few years back, so it fell into disfavor as a credible
assessment -- and there are all sorts of not-so-evidence-based articles
about it on the Internet.

If mom is addressing her own gluten sensitivity, I should think her
breastmilk would reflect that (and make her concern about Baby's
sensitivity null) -- but I'll let more learned Lactnet writers weigh in on
that possibility.

Given this baby's general fidgety behaviors **at the breast** I'd be
looking at the mechanics of flow and consumption, not the milk chemistry
itself as the culprit.
