In both my personal experience and my work with moms who have 
autoimmune diseases, I have found that mothers are more likely to see a 
"remission" in their symptoms while pregnant and breastfeeding (at 
least prior to return of menses). There is a definate relationship 
between hormonal function and inflammation, and what we usually see is 
that the hormonal state that supports pregnancy and lactational 
amenorrhea either reduces or mitigates the inflammatory response. As 
someone else mentioned, it is often the hormonal shift associated with 
weaning that causes a spike in symptoms and can finally lead to 
diagnosis for many moms.

Specific to celiac disease, I do not know how long this mom has been 
treating her condition, but elimination of gluten-containing foods is 
not necessarily enough to heal the gut. Also, many people have no idea 
how prevelent gluten is in the diet and do not do a complete 
elimination. It is also very common for those with celiac to have to 
eliminate all cow milk products and to have numerous other allergens 
that will need to be eliminated at least until the gut is healed. I 
personally have used L-glutamine, digestive enzymes, probiotics, a raw 
foods diet, homeopathy and ayurvedic herbs to heal my gut. I have also 
had to take herbs to heal my endocrine system as is typical with such 
conditions. Many people use synthetic hormones or take unecessary drugs 
b/c they cannot synthesize hormones or absorb nutrients.   Natural 
medicine is very effective in balancing and harmonizing these 
intricately connected systems.
