That is only for agrument and is a red herring. 

Proof or lack of it has no impact on whether the phenomenon actually occured or not, and that is the point, not whether we can bring ourselves to believe it or not..

Is observation by one or several persons once proof of anything?  

For that matter can we prove *anything* without assumptions?  Can we even prove we exist?
