Jacqui,
   
     I am concerned he is not transferring enough milk.  He should be
getting at least 15 oz./day.  That is roughly 2 oz. , 8xday.  You mentioned
with the pre and post weight check that he only took in 1/2 an oz.  Before
you started feeding him every 2 hours during the day, you mentioned that he
was eating every 4-5 hours with a 7-9 hour stretch of sleep at night.  So,
he was only eating about 4 times a day.   That would  be OK if he was eating
4 oz. a feeding, but he is only a 5# baby, so shouldnt have the stomach
capacity for that much milk.
 
     I would first put emphasis on making sure he was taking in enough milk,
before worrying about possible metabolic diseases.   You might consider
pumping and feeding him (via bottle, spoon, dropper, cup....) for 24 hours,
making sure he is eating close to 2 oz. 8 times/day.  I had another mom do
this once, and it woke her baby right up!  He started doing much better at
the breast, had increased output and increased weight.  
     The only thing you didnt mention in your post was whether or not you
were on pain medication.  With the recent scare over vicodin, I always
inquire if mom reports a lethargic, hard to arouse baby.
